So I wanted banana bread that didn’t get hard when reheated because of the butter so I just tried it with coconut oil. It worked!! I love you dearly.

Ingredients
- 2 cups flour
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 2 eggs
- 1 ½ cups mashed banana
- 1 cup sugar
- ½ cup coconut oil (melted)
- ¼ cup walnuts
Preparation
- Preheat oven to 350 degrees and grease bread pan (1 regular or 5 mini)
- Mix all wet ingredients in a stand mixer
- Mix all dry ingredients in a separate bowl
- Add dry ingredients into the wet mixture and then add the walnuts
- Pour batter into either 1 regular sized greased bread pan or 5 mini pans
- Bake at 350 degrees for 30 min for mini loafs for 55 min for standard size
- Bake until a toothpick comes out clean
- Can be frozen for 3 months
