So I wanted banana bread that didn’t get hard when reheated because of the butter so I just tried it with coconut oil. It worked!! I love you dearly.

Ingredients

  • 2 cups flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 2 eggs
  • 1 ½ cups mashed banana
  • 1 cup sugar
  • ½ cup coconut oil (melted)
  • ¼ cup walnuts

Preparation

  • Preheat oven to 350 degrees and grease bread pan (1 regular or 5 mini)
  • Mix all wet ingredients in a stand mixer
  • Mix all dry ingredients in a separate bowl
  • Add dry ingredients into the wet mixture and then add the walnuts
  • Pour batter into either 1 regular sized greased bread pan or 5 mini pans
  • Bake at 350 degrees for 30 min for mini loafs for 55 min for standard size
  • Bake until a toothpick comes out clean
  • Can be frozen for 3 months
