Chicken Enchilada Soup - Crockpot

On cold days I want something that soothes my soul. This is one of the many crockpot meals that I like to do just that. It has some good flavors and an ode to our Texas roots. No matter where you are in this world I hope that when you need to soothe your soul that these recipes may bring you some peace and good memories. I love you dearly.

Ingredients
- ½ cup Chopped Onion
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1 tsp Garlic Powder
- 1 19oz can Red Enchilada Sauce
- 1 28oz can Fire-Roasted Diced Tomatoes
- 1 15oz can Black Beans, drained and rinsed
- 2lb Chicken Breasts, cut into thirds
- 2 ½ cup Chicken Broth
- ⅓ cup Cheddar Cheese, shredded
- ¼ cup Heavy Cream
Toppings
- Sour Cream
- Sliced Lime
- Crushed Tortilla Chips or Tortilla Strips
Preparation
- Combine all ingredients (exclude Cheese and heavy cream) and place in crockpot on high for 3 ½ hours or on low for 6 hours
- Once done remove and shred chicken and add back to pot adding cheese and heavy cream
- Stir until combined and serve hot with desired toppings
