Ingredients (topping)
- 3 tablespoons flour
- 3 tablespoons brown sugar
- ¼ teaspoon cinnamon
- 2 tablespoons butter (softened)
- 3 tablespoons chopped walnuts or pecans
Ingredients (muffin * dry ingredients, ** wed ingredients)
- * 1 ½ cups flour
- * ½ cup sugar
- * 1 ¼ teaspoon baking powder
- * ½ teaspoon cinnamon
- * ¼ teaspoon ground ginger
- * ¼ teaspoon baking soda
- * ¼ teaspoon salt
- * ¼ cup softened butter
- ** 1 egg
- ** ½ cup buttermilk or sour milk
Preparation
- Preheat oven to 400 degrees and put 12 muffin cups into muffin tins
- Mix all topping ingredients in a small bowl and set aside
- Mix dry ingredients in medium bowl cut in the butter until mixture resembles coarse crumbs
- Mix egg and buttermilk and add all at once to the dry mixture.
- Stir until moistened (should be lumpy)
- Spoon ½ of the batter into the muffin cups filling each one ⅓ full
- Put ½ of the topping mixture in the muffin cups on the 1st half of the batter
- Spoon the remaining batter into the muffin cups
- Finish with the last of the topping mixture making a layered muffin
- Bake at 400 degrees for 15 to 18 min
