Ingredients (topping)

  • 3 tablespoons flour
  • 3 tablespoons brown sugar
  • ¼ teaspoon cinnamon
  • 2 tablespoons butter (softened)
  • 3 tablespoons chopped walnuts or pecans

Ingredients (muffin * dry ingredients, ** wed ingredients)

  • * 1 ½ cups flour
  • * ½ cup sugar
  • * 1 ¼ teaspoon baking powder
  • * ½ teaspoon cinnamon
  • * ¼ teaspoon ground ginger
  • * ¼ teaspoon baking soda
  • * ¼ teaspoon salt
  • * ¼ cup softened butter
  • ** 1 egg
  • ** ½ cup buttermilk or sour milk

Preparation

  • Preheat oven to 400 degrees and put 12 muffin cups into muffin tins
  • Mix all topping ingredients in a small bowl and set aside
  • Mix dry ingredients in medium bowl cut in the butter until mixture resembles coarse crumbs
  • Mix egg and buttermilk and add all at once to the dry mixture.
  • Stir until moistened (should be lumpy)
  • Spoon ½ of the batter into the muffin cups filling each one ⅓ full
  • Put ½ of the topping mixture in the muffin cups on the 1st half of the batter
  • Spoon the remaining batter into the muffin cups
  • Finish with the last of the topping mixture making a layered muffin
  • Bake at 400 degrees for 15 to 18 min
