Oma's Key Lime Pie with Coconut Cookie Crust

Oma Dianne has some of the best recipes! When she decided to move from her home into assisted living she allowed me to have her recipe cards. I have not made all of them but I can almost guarantee they are the best. Just like you and your soon to be little brother. I love you dearly.

Ingredients (crust)

  • 43 vanilla wafers (¼ cups crumbs)
  • ½ cup sweetened coconut
  • 6 Tbs melted butter

Ingredients (filling)

  • 3 egg yolks
  • 1 can sweetened condensed milk
  • ½ cup key lime juice
  • 1 tsp lime zest

Preparation

  • Preheat oven to 350 degrees
  • Crust:
    • Pulse in food processor all the vanilla wafers (you’ll need ¼ cups crumbs)
    • Add coconut and melted butter and pulse to blend
    • Press mixture along bottom and up side of a 9in pan
  • Filling:
    • Beat yolks until they are lemon colored
    • Blend in sweetened condensed milk then add in lime juice and zest
    • Stir until well blended
    • Pour into the 9in pan
    • Bake 12 min until mixture is set
  • If using a glass pie pan, bake at 325 degrees
